Le Café Parisien – Saulieu

Fondé en 1832 et classé "Café Historique d'Europe", le Café Parisien est situé en plein centre de la ville, entre la Mairie, le Musée François Pompon et la Basilique romane Saint-Andoche. Sa façade de pierre de taille et de marbre est citée à l'Inventaire des Bâtiments de France et les espaces intérieurs ont été miraculeusement conservés ce qui lui vaut le titre respectable et envié de "Plus ancien Café de Bourgogne". Depuis sa création, "Le Parisien" a été le centre vivant de la cité, avec ses salles de billard, de jeux de cartes et de réunions… Fréquenté autrefois par le sculpteur François Pompon, le cuisinier Alexandre Dumaine, l'ingénieur Jean Bertin, inventeur du turbo-train, l'écrivain Jean Genet et plus récemment le dessinateur Roland Topor ou le chef Bernard Loiseau, il est resté un lieu de rencontres où se côtoient toutes les couches de la population. Depuis le 15 avril 2004, Jean Marc Tingaud, photographe célèbre et enfant du pays, entouré d'une équipe accueillante et enthousiaste, a redonné vie au Café Parisien dans le respect des traditions d'hospitalité et de gourmandise de Saulieu, du Morvan et de la Bourgogne. Aujourd'hui enrichi d'un restaurant de cuisine régionale et d'une boutique de vins sélectionnés et de produits du terroir, le Café Parisien perpétue cette tradition du ' bien boire, bien manger et bien vivre '. Il est devenu le lieu de rendez-vous des musiciens des alentours, des artistes et amoureux de l'art et de la bonne chair, dans la joie de vivre et la simplicité. Tout au long de l'année, concerts, expositions, conférences et séminaires se succèdent. Au dernier étage, on visite l'appartement des anciens propriétaires, devenu lieu d'expositions. Seine Fassade von Bruchstein und von Marmor ist im Inventar der Gebäude von Frankreich zitiert und die Innenräume sind auf wunderbare Weise bewahrt gewesen, was ihm den respektabelen und beneideten Titel kostet " älterer Cafés von Burgund ".
