Ancien relais sur la voie romaine d'Autun à Auxerre, la ville médiévale où prospéraient auberges et tavernes a gardé cette vocation d'étape gastronomique appréciée déjà par madame de Sévigné et Napoléon. Outre quelques tables de renommée internationale, on y découvre une Tour vestige des fortifications du XIVe siècle. En flânant dans les rues, on passe devant la maison natale de François Pompon à qui l'on doit le célèbre Taureau de bronze installé en bordure de la départementale 906 (à côté de l'office de tourisme). La petite place pavée où trône une fontaine du XVIIIe siècle invite à la visite de la plus renommée des églises romanes de Côte-d'Or, la basilique Saint-Andoche. Porte du Parc naturel régional du Morvan, Saulieu est la capitale du sapin de Noël, et le lieu dans lequel chaque année au mois d'août le roi ''charolais'' (site remarquable du goût) est à l'honneur.

A former relay on the Roman road from Autun to Auxerre, the medieval town, where inns and taverns flourished, has kept its vocation as a gastronomic stopover, already appreciated by Madame de Sévigné and Napoleon. In addition to a few internationally renowned restaurants, there is a tower, a vestige of the 14th century fortifications. While strolling through the streets, one passes in front of the house where François Pompon was born and to whom one owes the famous bronze bull installed on the edge of the departmental road 906 (next to the tourist office). The small paved square with its 18th century fountain invites you to visit the most famous Romanesque church in the Côte-d'Or, the Saint-Andoche basilica. Gateway to the Morvan Regional Nature Park, Saulieu is the capital of the Christmas tree, and the place where every year in August the king of Charolais (remarkable site of taste) is honoured.

Die mittelalterliche Stadt, die einst als Relaisstation auf der Römerstraße von Autun nach Auxerre diente und in der Gasthäuser und Tavernen florierten, hat sich ihre Berufung als gastronomische Etappe bewahrt, die schon von Madame de Sévigné und Napoleon geschätzt wurde. Der kleine gepflasterte Platz, auf dem ein Brunnen aus dem 18. Jahrhundert thront, lädt zur Besichtigung der bekanntesten romanischen Kirche der Côte-d'Or, der Basilika Saint-Andoche, ein. Saulieu, das Tor zum regionalen Naturpark Morvan, ist die Hauptstadt des Weihnachtsbaums und der Ort, in dem jedes Jahr im August der König ''Charolais'' (site remarquable du goût) geehrt wird.

De middeleeuwse stad, een voormalige stopplaats op de Romeinse weg van Autun naar Auxerre, waar herbergen en tavernes bloeiden, heeft haar roeping als gastronomische stopplaats behouden, die reeds door Madame de Sévigné en Napoleon werd gewaardeerd. Naast enkele internationaal bekende restaurants is er een toren, een overblijfsel van de 14e eeuwse vestingwerken. La pequeña plaza empedrada con su fuente del siglo XVIII le invita a visitar la iglesia románica más famosa de la Costa de Oro, la basílica de Saint-Andoche. A las puertas del Parque Natural Regional de Morvan, Saulieu es la capital del árbol de Navidad, y el lugar donde cada año, en agosto, se honra al rey "charolés" (un sitio de notable sabor).
