Implanté à Gevrey-Chambertin depuis 1901, le domaine Gallois est une exploitation à taille humaine. Le domaine familial exploite 4 hectares où s’épanouissent respectivement 7 appellations. On retrouve ici toute la hiérarchie bourguignonne: Bourgogne Côte d’Or, Gevrey-Chambertin "La Justice" et "Vieilles Vignes", Gevrey-Chambertin 1er cru « Combe aux Moines », Gevrey-Chambertin 1er « Les Goulots », Gevrey-Chambertin 1er « Les Petits Cazetiers » et un Grand Cru Charmes-Chambertin. A la tête du domaine depuis 1989 Dominique Gallois commence alors la commercialisation en bouteilles. En 2022, l’aventure continue avec son épouse Sophie qui l’a rejoint sur l’exploitation et qui dirige aujourd’hui le domaine. Respect et Modestie, telle est la philosophie du domaine: Respect de l’environnement, de la nature du terroir que le monde nous envie et Modestie car le meilleur des vignerons ne produit pas un grand vin s’il n’aide pas la nature à lui donner de beaux raisins. L’âge des vignes, les soins apportés à chacun des ceps par l’équipe en interne et les faibles rendements maîtrisés participent à la qualité recherchée dévoilant les plus belles caractéristiques du pinot noir. Le Pinot noir est un fabuleux révélateur qui retranscrit les subtiles nuances de notre terroir, il en exprime toute son originalité et sa singularité. Adepte du « non-interventionniste », le vin doit transmettre le véritable goût du terroir. Ici, chaque cru exprime au plus près l’originalité du lieu où il est né, son climat. Le domaine produit des vins puissants, équilibrés et structurés, aux couleurs profondes et soutenues. La palette aromatique complexe est soulignée d’une belle intensité. L’extraction est parfaitement maîtrisée et le fondu des tanins en font des vins soyeux, particulièrement élégants. In 2022, the adventure continued with his wife Sophie, who joined him on the estate and now runs it.
